Apple Butter Oatmeal Cookies

Ingredients

  • 1 1/2 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 1/2 cup butter
  • 3/4 cup sugar
  • 2 eggs
  • 1/2 cup apple butter
  • 1 tbsp apple pie spice {or cinnamon}
  • 2 tsp baking powder
  • 2 tsp vanilla extract
  • 1/4 tsp salt

Cream Cheese Frosting

  • 8 tbsp softened cream cheese
  • 1 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1-2 tbsp milk

Instructions

  1. Preheat oven to 350 degrees.

  2. Cream together butter and sugar until light and fluffy.

  3. Add eggs, apple butter, and vanilla extract. Mix until combined.

  4. In a separate bowl, mix dry ingredients - flour, oatmeal, baking powder, and salt.

  5. Add dry ingredients and mix until combined.

  6. Bake for 10-12 minutes. A longer bake will result in a crispier cookie.

  7. Frost when the cookies have cooled.

Recipe Notes

The frosting recipes will frost 12 cookies. Double it to frost 24.
