Cinnamon Zucchini Muffins

A healthy breakfast recipe using spiralized zucchini.

Servings 12 muffins

Ingredients

  • 1 cup all purpose flour
  • 1/2 cup almond flour
  • 1 egg
  • 1 banana {mashed}
  • 1/2 cup brown sugar
  • 1/3 cup vegetable oil
  • 1/4 cup plain yogurt
  • 1 medium zucchini {shredded}
  • 1 tbsp ground cinnamon
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Muffing Topping

  • 1 tsp sugar
  • 1/2 tsp ground cinnamon

Instructions

  1. Preheat oven to 350 degrees.

  2. Shred a zucchini and use a paper towel to soak up the water. Mix wet ingredients – shredded zucchini, mashed banana, oil, yogurt, egg, and vanilla extract.

  3. Mix dry ingredients in a separate bowl – flours, sugar, cinnamon, baking soda, baking powder, and salt.

  4. Add dry ingredients to the wet ingredients and mix until combined.

  5. Add batter to lined muffin tins and top each muffin with a sprinkle of cinnamon-sugar.

  6. Bake for 20-22 minutes.
