Pumpkin Chai Slow Cooker Oats

A delicious breakfast recipe made easy in the slow cooker.

Servings 6

Ingredients

  • 1 1/2 cups steel cut oats
  • 2 1/2 cups water
  • 2 1/2 cups unsweetened vanilla almond milk
  • 3/4 cup pumpkin puree
  • 1/3 cup maple syrup OR brown sugar
  • 1 tbsp pumpkin pie spice
  • 1 tbsp chai spice
  • 2 tsp vanilla extract
  • 1 cinnamon stick

Instructions

  1. Add all ingredients to a slow cooker / crock pot and stir.

  2. Cook on HIGH for 2 hours and 15 minutes. Stir as needed.

  3. Remove cinnamon stick before serving.

Recipe Notes

1. Any milk will work in this recipe. I prefer the flavor of almond milk.


2. This is a lightly sweet breakfast recipe. Add extra sugar if you want it sweeter.
