Pumpkin Chia Breakfast Cookies

Ingredients

  • 1 cup pumpkin puree
  • 4 tbsp almond butter
  • 1/4 cup maple syrup
  • 2/3 cup coconut flour
  • 2 tsp pumpkin pie spice
  • 1 tsp baking soda
  • 1 tbsp chia seeds
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350 degrees.

  2. Combine pumpkin puree, almond butter, maple syrup, and egg. Mix well. Add coconut flour, pumpkin pie spice, baking soda, and salt. Mix just until combined. Stir in chia seeds.

  3. Add batter to a cookie sheet covered with parchment paper, using a medium cookie scoop for each cookie.

  4. Before baking, use either a drinking glass or a fork to lightly smash the cookies into a circular shape.

  5. Bake for ~16 minutes.

  6. Store in the refrigerator in a covered container or freeze.
