Flourless Pumpkin Spice Muffins

Ingredients

  • 2 ripe bananas
  • 1/2 cup pumpkin puree
  • 2 eggs
  • 1 tbsp coconut oil
  • 2 tbsp unsweetened almond butter
  • 3 tbsp honey
  • 1/2 cup coconut flour
  • 2 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350 degrees.

  2. Mix banana, eggs, pumpkin, coconut oil, honey, and almond butter. Add coconut flour, spices, baking powder, baking soda, vanilla extract and salt. Mix until just combined.

  3. Fill the muffin tins 3/4 full.

  4. Bake for 25-30 minutes, or until a toothpick comes out clean.
