Baklava Cookies

A cookie recipe that tastes like baklava.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup white whole wheat flour
  • 4 tbsp unsalted butter
  • 2 eggs
  • 1/3 cup honey-flavored tahini
  • 1/3 cup dark brown sugar
  • 1/3 cup white sugar
  • 1 cup semi-sweet chocolate chips
  • 1 cup pistachios {shelled and chopped}
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350 degrees.

  2. Cream together butter and sugar. Add vanilla, eggs, and tahini.

  3. Mix dry ingredients in a separate bowl - flour, baking powder, baking soda, and salt.

  4. Slowly add dry ingredients to the mixing bowl. Mix until combined.

  5. Stir in chocolate chips and chopped pistachios.

  6. Chill the dough for at least 30 minutes before baking.

  7. Flatten each cookie lightly with a fork prior to baking.

  8. Bake for 12 minutes.
