Ingredients

  • 1 cup steel cut oats
  • 1 cup water
  • 2 cups unsweetened vanilla almond milk
  • 1 cup shredded carrots
  • 1/4 cup raisins
  • 2 apples {chopped}
  • 1/4 cup maple syrup
  • 1 tsp cinnamon
  • 1 tsp vanilla extract

Toppings

  • 1/4 cup walnuts
  • 1/2 cup unsweetened coconut flake
  • 2 tbsp shredded carrots

Instructions

  1. Add ingredients to an instant pot and stir.

  2. Close the lid and seal the instant pot. Make sure the pressure release valve is set to “sealing.”

  3. Select Manual and set the cooking time to 3 minutes.

  4. After the time is up, let the pressure naturally release by letting the instant pot rest for 10 minutes. After 10 minutes, slowly release any additional pressure from the valve.

  5. Let the stand for 10 minutes to thicken. Add toppings before serving.
