Flourless Carrot Cake Muffins

A healthy breakfast recipe using oat flour.

Ingredients

  • 1 cup old-fashioned oats {ground into a flour}
  • 1/4 cup almond flour
  • 4 medium carrots {shredded}
  • 1 cup unsweetened shredded coconut
  • 1 tbsp coconut oil
  • 1/2 cup golden raisins
  • 2 ripe bananas {mashed}
  • 2 eggs
  • 1/3 cup maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350 degrees.

  2. Mix wet ingredients - shredded carrots, coconut oil, bananas, eggs, maple syrup, and vanilla extract.

  3. In a separate bowl, combine dry ingredients - oat flour, almond flour, shredded coconut, baking soda, and spices.

  4. Add dry ingredients to wet ingredients and mix until combined. Stir in golden raisins.

  5. Bake for 25 minutes.
