Buffalo Chicken Quinoa Bowls

A healthy lunch or dinner recipe made with my favorite hot sauce.

Ingredients

  • 1 cup chicken broth
  • 1/2 cup uncooked quinoa
  • 2 stalks celery {chopped}
  • 1 cup shredded carrots {apx. 2 large carrots}
  • 1 cup shredded chicken
  • 4 tbsp Frank's Red Hot Buffalo Sauce
  • 2 tbsp bleu cheese {+2 teaspoons}

Instructions

  1. Rinse quinoa with water and drain. Bring quinoa and chicken broth to a boil; simmer until water is evaporated and quinoa is fluffy {about 15 minutes}. Add extra water and keep simmering if needed.

  2. While the quinoa is cooking, chop the celery and shred the carrots.

  3. Once the quinoa is done, mix the chicken, buffalo sauce, celery and carrots. Add 2 Tablespoons of blue cheese.

  4. Top each bowl with a small sprinkle of blue cheese before serving.
