Chai Spice Banana Muffins

A delicious, easy banana muffin recipe with chai spice flavors.

Ingredients

  • 1 cup flour
  • 1/2 cup almond flour
  • 3 ripe bananas (mashed)
  • 1/3 cup brown sugar
  • 1 egg
  • 1/4 cup vegetable oil
  • 1/4 cup plain yogurt
  • 1/4 cup chai tea latte concentrate
  • 1-2 tsp chai spice
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350 degrees.

  2. Mash the ripe bananas. Add egg, chai tea concentrate, oil, yogurt, brown sugar, and vanilla. Mix until combined.

  3. In a separate bowl, mix the dry ingredients - flour, almond flour, baking soda, chai spice, and salt.

  4. Add dry ingredients to wet ingredients and mix until combined - do not overmix.

  5. Add batter to a muffin tin, with each muffin tin 3/4 full.

  6. Bake for 20 minutes.
