Pumpkin Pie Greek Yogurt Mousse

Ingredients

  • 1/2 cup pumpkin puree
  • 4 tbsp maple syrup
  • 1/3 cup 2% Greek yogurt
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp cinnamon
  • 1/4 tsp vanilla extract

Instructions

  1. Add pumpkin puree, maple syrup, pumpkin pie spice, ground cinnamon, and vanilla extract to a small saucepan.

  2. Mix all ingredients and heat on "low", stirring occasionally, for 5 minutes.

  3. Remove from heat and let cool for 10 minutes.

  4. Stir in Greek yogurt until mixture is smooth.

  5. Refrigerate for at least 30 minutes, covered.

  6. Add toppings before serving. I used mini chopped chips, whipped cream, and a sprinkle of pumpkin pie spice.
