Whole Pineapple Cake

A summer-inspired dessert recipe using fresh pineapple.

Ingredients

  • 1 cup white all-purpose flour
  • 1 cup white whole wheat flour
  • 1 1/2 cup sugar
  • 1 small pineapple
  • 2 eggs
  • 1 tsp baking soda
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350 degrees.

  2. Cut and core the pineapple. Chop half of the pineapple into small chunks. Puree the other half of the pineapple in a food processor until there are no chunks remaining.

  3. Mix wet ingredients in a bowl - pineapple, eggs, and vanilla extract.

  4. Add the dry ingredients: all-purpose flour, white whole wheat flour, sugar, and baking soda. Mix until combined.

  5. Bake for 40 minutes. The cake is best served warm.

  1. Fresh whipped cream / Cool Whip, and/or berries
