My husband is the gardener in the family; I don’t have the patience for it and have been known to barely keep a cactus alive. However, this year we were really busy and distracted in the spring and early summer, so we neglected to plant an herb garden except for a basil plant. Thankfully basil is my favorite herb! I have been using it for all things caprese lately, including these Caprese Pizza Crackers. I paired this Italian-inspired cracker appetizer with Riondo Prosecco over the weekend. It was the perfect combination of sparkling wine and crunch. I love prosecco. It always feels special to drink during the summer.

I enjoyed a few Caprese Pizza Crackers before taking them to a neighborhood potluck. They were gone almost instantly. This may be the easiest appetizer recipe I’ve ever made, which is necessary these days with a young toddler running around.

Caprese is my favorite simple Italian dish, especially in the summertime. My basil plant is growing taller by the day, so we have been enjoying caprese pasta, salad or caprese-style pizza every week. For the easy appetizer recipe I’m sharing today, all you have to do is top a cracker with pizza sauce and mozzarella before baking and add torn slices of basil after taking the crackers out of the oven. I prefer using pita crackers because they stay crisp even after baking. Since caprese is Italian, this appetizer pairs very well with sparkling Riondo Prosecco. When I was looking for the history of caprese as an Italian dish, I realized that this traditional flavor pairing matches the Italian flag – red (tomatoes), white (mozzarella cheese), and green (basil).

Caprese Pizza Crackers

Ingredients

  • 20 pita crackers
  • 20 mini mozarella balls
  • 1/4 cup pizza sauce
  • 10 basil leaves (chopped)

Instructions

  1. Preheat oven to 350 degrees.

  2. While the oven is warming up, chop basil into small pieces.

  3. Top each pita cracker with 2-3 teaspoons of pizza sauce. Add one mozzarella ball per cracker.

  4. Bake for 8-10 minutes.

  5. Add freshly chopped basil after the crackers are baked.
