Spring is only 7 days away and I could not be more excited. It was chilly this morning and it snowed this afternoon, but sunny and warmer days are coming. I’m ready to break out my spring coat, pack away my winter hats and take C to the park again on a regular basis. His laugh while enjoying a ride on the swings is infectious.
I’m sharing this post as inspiration to enjoy lighter meals this spring. A few years ago my mother-in-law gifted me a spiralizer. It is still one of my favorite kitchen gadgets, especially for zucchini and sweet potatoes. One of the best things about spiralized veggies is how fast you can cook them!
