Cashew Butter Granola is my new favorite breakfast recipe. This baked granola includes a few simple ingredients and is delicious paired with yogurt in the morning.
As I mentioned in my Friday Five post last week, I spent a long weekend in southwest Florida recently. K and I take a trip down south every year to visit C’s grandparents. One of my favorite things to do is order a box of Honeybell oranges from the South Naples Citrus Grove. Our box arrived last week and it’s almost gone. These Honeybells are irresistible!
Honeybell oranges are super juicy, which means I end up snacking on one over a towel or let’s be honest, the kitchen sink. Before the oranges are gone I wanted to make a new recipe incorporating orange flavor, and Cashew Butter Granola was the winner.
Adding cashew butter to granola makes it taste amazing! I added orange flavor by using orange juice and orange zest from a Honeybell orange. This Cashew Butter Granola is also naturally sweetened with honey. Because I used honey, melted cashew butter, and orange juice, I didn’t need to add any extra oil to the granola.
I baked this granola last weekend while C was napping and K was out on a solo cross-country skiing workout. He came back starving and snacked on a bowl of granola with yogurt. He told me it was “the best thing he had ever tasted” – definitely a blog-worthy recipe. It may have been the “hanger” talking, but I’ll take it.
I stored the baked granola in small glass jars, and it has stayed fresh for close to a week. This recipe makes a small batch, 4-6 servings, so I’ll be baking another batch ASAP.
Cashew Butter Granola with Orange Zest
A simple breakfast granola recipe, baked on low heat.
Ingredients
- 2 cups old-fashioned oats
- 1/2 cup salted cashews {chopped}
- 1/4 cup cashew butter {melted}
- 1/4 cup orange juice
- 2 tbsp honey
- 1 tbsp orange zest
Optional Topping
- 4 tsp orange zest {one tsp per serving}
Instructions

Preheat oven to 250 degrees.

Stir together old-fashioned oats, chopped salted cashews, cashew butter, orange juice, and orange zest.

Spread granola evenly on a covered baking sheet. Bake for 75 minutes, stirring twice {every 30 minutes}.

Optional: Top each bowl of granola with 1 tsp orange zest.
