The radio silence on this blog lately is due to the fact that I’m busy loving every summer fruit! Bing cherries, watermelon, muskmelon, blueberries, and strawberries – I can’t get enough. Peaches will be in season any minute, and I can’t wait to add them to my weekly fruit list. Until then, I created these Peach Pie Energy Bites using dried peaches. This is an easy snack recipe that’s perfect for after a workout or any time of day.
I picked up dried peaches at my local Mariano’s grocery store that contain no added sugar. Peaches are already SO sweet on their own. This recipe comes together quickly in a food processor with only a few ingredients.
Raw almonds, dried peaches, old-fashioned oats, California dates, and cashew butter. You can sub any nut butter, but I wouldn’t recommend peanut since the flavor is strong.
I formed my Peach Pie Energy Bites using a medium cookie scoop. Simply pack the scoop with filling and roll into a ball.
These bites last the longest in the refrigerator, or frozen if needed.
I love the peach flavor! These bites would also be delicious with a bit of cinnamon or vanilla in the mix.
