Salted Cashew Key Lime Bites are chewy, tart and naturally sweetened with dates. This no-bake snack recipe can be made in a food processor in under 5 minutes and is compliant with Whole30.

I’m officially in the second week of my first Whole30. It hasn’t been as difficult as I thought it would be, knock on wood. Right now breakfast is the hardest because I’m getting bored with eggs and bananas/almond butter. I’m still craving snacks but eating them much more reasonably. I know that snacking is discouraged on the Whole30 program, but I realized quickly that I need them for energy – both for work and for keeping up with baby C.

I re-created one of my favorite energy bite recipes to enjoy during this month of Whole30. These Salted Cashew Key Lime Bites have no added or refined sugar. The bites include crunchy unsweetened coconut flakes, tart key lime juice and salty cashews – YUM.

These snack bites are compliant with Whole30 since they are naturally sweetened with Medjool dates and include no refined or added sugar.

Salted Cashew Key Lime Bites come together easily in a food processor. I used a medium cookie scoop to create these bites and immediately rolled them in unsweetened coconut flakes for extra crunch and flavor. These snacks will stay fresh in the refrigerator for several days.

This recipe reminds me how much I love key lime flavor. K and I are taking a short vacation to southwestern Florida next month with C to visit family. This will be post-Whole30 – my first bite of dessert is definitely going to be a tart slice of Key Lime Pie.

 

Salted Cashew Key Lime Bites

Servings 13 bites

Ingredients

  • 1 cup salted cashews
  • 1/2 cup raw almonds
  • 3 dried figs
  • 5 Medjool dates {pits removed}
  • 1/2 cup unsweetened coconut flakes
  • 1/4 cup key lime juice

Instructions

  1. Add all ingredients to a food processor.

  2. Process using the "pulse" function for ~30 seconds, until the ingredients are combined and the nuts are chopped into small pieces.

  3. Use a medium cookie scoop to form the mixture into balls.

  4. If desired, roll the balls in extra unsweetened coconut flakes.

Recipe Notes

You can substitute key lime juice for regular lime juice.
